Meringues in the Morning

We made masks.  From an empty egg carton.  At 7am in the morning.  (Apologies for the morning hair.)
It just seemed like the thing to do while we were waiting for our egg whites to come to room temperature.
This story actually begins last night, when I somehow got it in my head to try meringue making.  So this morning, we gave it a shot.
 For our first attempt, they turned out pretty well.  They were definitely eaten quickly enough!  And whilst they're definitely not in the 'healthy' category, they are a harmless little piece of air and sugar.  Next batch I'm going to try one of the variations.

Mini Meringues Makes 24
2 egg whites (at room temperature), 1/2 cup caster sugar, pinch of salt
Preheat oven to 160 degrees centigrade.
In a non-plastic bowl, beat whites until they hold soft peaks. Gradually add sugar, then beat for another 2-3 minutes until mixture is stiff and glossy. Pipe, or place with a teaspoon on tray with baking paper. Bake 30-45 minutes. Leave to cool in oven, about 1 hour.
Variations
Colour them with food colouring.
Fold in 1 tbs of cocoa.
Use brown sugar in place of caster sugar.
Mix through 2 tsp finely grated orange rind.

It was a lovely day today, a bit of morning sunshine, a bit of yardwork, a bit of cooking.  I can feel the days slowly getting longer, and spring is on its way!

    great idea with the masks, my little one makes cars out of them.
