It just seemed like the thing to do while we were waiting for our egg whites to come to room temperature.
This story actually begins last night, when I somehow got it in my head to try meringue making. So this morning, we gave it a shot.
For our first attempt, they turned out pretty well. They were definitely eaten quickly enough! And whilst they're definitely not in the 'healthy' category, they are a harmless little piece of air and sugar. Next batch I'm going to try one of the variations.Mini Meringues Makes 24
2 egg whites (at room temperature), 1/2 cup caster sugar, pinch of salt
Preheat oven to 160 degrees centigrade.
In a non-plastic bowl, beat whites until they hold soft peaks. Gradually add sugar, then beat for another 2-3 minutes until mixture is stiff and glossy. Pipe, or place with a teaspoon on tray with baking paper. Bake 30-45 minutes. Leave to cool in oven, about 1 hour.
Variations
Colour them with food colouring.
Fold in 1 tbs of cocoa.
Use brown sugar in place of caster sugar.
Mix through 2 tsp finely grated orange rind.
